Program Description:

Food Security and Resilience in Italy

Program description:
The purpose of this two-week course is to understand the elements and dynamics of resilient food systems- as well as the people, communities, relations, and policies that contribute to resilience. Impacts of rapidly globalizing food systems on food and nutrition security at local, household, and intra-household levels will be explored, highlighting interactions with gender identities. These issues promote a great deal of debate and have encouraged the development of a number of modern initiatives to counterbalance socio-economic and environmental effects related to these changes. Recent policy and resources for global health programming have increasingly focused on promoting improved food security, nutrition and sustainability. This course will provide students with a background in documents relative to this debate, access to organizations prominent in international food security policy discussions, and analytical skills for identifying the elements of resilient food systems and the outcomes of food and nutrition security. Students stay at the Convent Santa Maria del Giglio in Bolsena for the majority of the course. Students travel to Rome and Parma, to visit international food security organizations, including the United Nations Food and Agriculture Organization, Bioversity International, and the European Food Safety Agency. The health and environmental benefits of the Mediterranean diet provide an on-going exploration of an alternative food system and evidence base for course discussions. The practical laboratory aspect of the course encourages students to discover Italy’s local sustainable agricultural system firsthand through visits to local agricultural producers and distributors. 

Eligibility & admission guidelines
Tulane graduate students, undergraduate Tulane students who have been admitted to the Tulane MPH program for summer/fall 2020, and non-degree seeking students are eligible to apply for admission. Priority will be given to those students in degree-seeking university programs. After a thorough review of all application materials, students will receive notification of acceptance or rejection into the program.

Program cost: $1,5000   

  • Accommodation throughout the duration of the course, the night before the course begins (5/24/20), and the final night of the course (6/5/20)

GCHB 6790: Food Security and Resilience

Housing and Meals

  • Students will be housed at the Convent Santa Maria del Giglio in Bolsena for the majority of the course. Students will have individual rooms with shared bathrooms and will have access to all of the spaces on campus, including the library, workstations, the lounge, and the garden. Wi-Fi is available throughout the convent.
  • During field trips to Rome and Parma, students will share double rooms at pre-arranged accommodations.
  • All meals are provided throughout the course.

Payment Terms and Schedule

  • A deposit of $300 is due with the application. Deposits should be made in the form of a $300 check written out to Tulane University. Students may give their deposits to Liz Joiner, the GCHB Operations Manager, in room 2213 in the Tidewater building.
  • A deposit is due by Tuesday, March 3rd to guarantee your spot in the course.
  • The remaining balance ($1,200) of the course fees is due with tuition.

Registration & Scheduling
Students must register for GCHB 6790: Food Security and Resilience for the summer 2020 semester.


  • A valid passport is required for all U.S. citizens travelling to Italy. Your passport must be valid for another 6 months following your return to the U.S.
  • Requirements vary for other nationalities. International students should check the requirements for their respective countries.

Medical & International SOS
All students participating in Tulane School of Public Health and Tropical Medicine summer programs are covered by a comprehensive study abroad medical insurance policy provided through GeoBlue. This insurance is included in the cost of the program. Students are also covered by Global Rescue.

Accessibility for the Disabled
Tulane University is committed to making all its programs accessible to the physically challenged. Persons requiring special facilities should notify the specific program coordinator and the academic director as soon as possible (in writing). All effort will be made to accommodate but students should be aware that reasonable accommodation may be required.

Refund & Cancellation Policy
All money will be refunded in full to any student not accepted into the program. Deposits will be refunded if the minimum number of students (8 students) for the course is not met.
